Ask and ye shall receive!


We had quinoa with dinner again last week. I took photos. :)

Our dinner was Salmon with Maple Balsamic Glaze, butternut squash, and quinoa. It was super yummy! I posted the recipe for the squash once before, but for convenience sake, I'll do it again.
Butternut Squash
½ cup chopped pecans
1 tbsp olive oil
1 large onion, finely chopped (I used a medium-small one)
2-3 cloves garlic, finely chopped (I used minced garlic from a jar but fresh would be better)
2 ¼ lbs butternut squash, peeled, seeded, cubed (I used about 1 1/4 lbs)
Salt and Pepper to taste
Dash cayenne pepper (don't have any)
3 tbsp chopped fresh parsley (forgot this)
½ cup dried cranberries or grated Parmesan cheese - optional (I used both)
Toast pecans in ungreased skillet; stir to avoid burning. Set aside.
Heat olive oil in large skillet over low; saute onion and garlic until tender (15 min). Add squash, cover, and cook, stirring occasionally, until tender but still holding its shape (20 min).
Season with salt, pepper, and cayenne. Stir in half the pecans and half the parsley. Transfer to serving bowl. Garnish with remaining pecans and parsley. Option: Sprinkle with cranberries or Parmesan.
The salmon recipe is from a dear friend I've known since I was pregnant with The Girl. She has a son the same age.

Salmon with Maple Balsamic Glaze
2 tbsp maple syrup (I use real maple syrup)
1 tbsp balsamic vinegar (I use red; she uses white)
2 tbsp orange juice
1 tsp minced garlic (I use jarred when I don't have fresh)
1 tbsp olive oil
¼ tsp salt (I omit this)
¼ tsp pepper (I omit this)
1 lb salmon steaks or fillets
In a small saucepan, mix together syrup, vinegar, juice and garlic. Bring to a boil, reduce heat, and simmer 5 minutes or until mixture is reduced. Remove from heat and stir in oil. Pour over salmon and marinate 10 minutes.
Remove salmon and sprinkle with salt and pepper. Liberally brush salmon with marinade. Broil or grill 4-5 inches from heat on an uncovered grill directly over medium coals (12 min. per inch of thickness). For fillets, baste again halfway through cooking; for steaks, turn halfway through cooking time and baste again.
It was entirely too cold to grill the salmon so I baked it. When I do this, I triple the marinade and then cook the salmon IN the marinade. (You could easily do this with doubling the recipe.) The cooked marinade makes a wonderful glaze to pour over rice or whatever you serve it with (in this case, the quinoa).
Now for the quinoa. Again, I made the basic recipe but instead of using water, I used chicken broth.

You make it just like rice. Here it is when I first put it in the pot...
...and here it is when it is finished.
The final meal...bon appetite! Again - I used some of the glaze on the quinoa for extra flavor.

The Boy's first Thanksgiving

Oops - we forgot it was Friday too! Sorry, Carrie!

Here is our Friday Foto for today...this was The Boy's first ever Thanksgiving. Incidentally, it was The Girl's first ever Thanksgiving too, but we won't get into that! (They did have to share the bib...but since she only had formula, it was no biggie!)

The Boy has always (and still does) love to eat! It is one of the few things that has not changed in the past almost eleven years! At the time of this photo, he still loved squash...now, not so much! He would not even try it last night (acorn squash that was SUPER yummy!).

Phriday Photos with Candid Carrie

After months and months, I finally decided to play along with Candid Carrie's Friday Foto Finish Fiesta.

This has always been one of my favorite pictures. It was taken when The Boy was about three years old. I love the entire image...boy and dad, hand-in-hand, oblivious of the camera. We had gone out to the pond that day to feed the ducks and geese and go for a little hike. I remember it was beautiful that day and we really enjoyed ourselves. It must have been an unseasonably warm day because there are no leaves on the trees and the grass is awfully brown. I also remember that I loved those overall shorts on The Boy. Of course, it doesn't hurt that The Husband has a great butt!!

If you look at the shadow you will get a better idea of how tall The Boy is to The Husband now. *sigh*

An Evening With Frog...or...Toad

I really don't know if this is a frog or toad...I don't know the difference. The Boy says that toads have bumpy skin and frogs do not. I don't know, nor do I really care (sorry Mr. Amphibian). Again, we live across the street from a lake, so we often have frogs hopping around. This guy is larger than most - he is a little smaller than the palm of my hand. I'm used to seeing the ones that are closer to the size of a thumbnail.

One of these days, I'll get some good shots of the lake to post.

Oh - and by the way...if you are not familiar with the musical, "A Year With Frog and Toad," it is WONDERFUL and your kids will love it. Make sure you SEE it - not just hear it!

Because there aren't enough of these guys out there...

Since I said I was going to add photos to my blog, I was walking around outside the other day, camera in hand, looking for some amazing and inspiring shots. I live across the street from a lake and it is beautiful all year (well, at least I think it is...we have not been here for a full year just yet).

Anyway, as I was wandering around, this is what I saw...


Nice, huh? Because these guys? Well, clearly there are not enough of them already running around! Heck - I don't even know what they are, but they're creepy all the same!
