We're having a cook-out with some neighbors on Friday and I'm making home-made macaroni & cheese. It is my mother-in-law's recipe and I thought I'd share. She does not measure when she makes it so good luck! LOL! I watched her and measured once and that is what I use. It usually works great but sometimes, not so much. :)

7 eggs
1 ¼ cup milk
16 oz. Velveeta
1 stick butter
5-6 slices of bread, broken into small pieces
1 lb elbow macaroni, cooked
salt & pepper to taste
While macaroni is boiling, scramble eggs and milk in a bowl. Add salt & pepper. Pour half macaroni into 10" square baker. Slice Velveeta to cover macaroni completely. Top with remaining macaroni. Pour egg/milk mixture over macaroni. **I usually add more "cheese" here. (OK - who are we kidding? Velveeta isn't really cheese so I had to use quotation marks!)** Cover with crumbled bread and slice pats of butter to cover bread. Bake uncovered at 350* for 30-40 min. (It can sometimes take longer so watch it).
It's super yummy. If you have another mac & cheese recipe, feel free to post it to me. :) I should warn you, though, that The Boy and The Girl are extraordinarily picky and neither one will eat any mac & cheese except for the blue box crap!
I am suspicious of the bread in there. Very suspicious.
ReplyDeleteI kid you not...it's what makes it so yummy! Give it a try - you'll be pleasantly surprised. I know I was. :)
