this and that...and a recipe

Wow - busy week! The Boy's first baseball game was scheduled for Monday night but it was rained out. His second game was Wednesday and they played. They won 5-2. I missed his first at-bat because I was with The Girl at gymnastics. The Girl can do a front flip and land on her feet (on the tumble track)! The boy hit a stand-up triple at his first at-bat, and hit singles his 2nd and 3rd at-bats. It was a good night in our house! The game that was rained out was rescheduled for tonight but got rained out again. The Boy is disappointed but since I'm cold, I'm happy!

We're having a cook-out with some neighbors on Friday and I'm making home-made macaroni & cheese. It is my mother-in-law's recipe and I thought I'd share. She does not measure when she makes it so good luck! LOL! I watched her and measured once and that is what I use. It usually works great but sometimes, not so much. :)

7 eggs
1 ¼ cup milk
16 oz. Velveeta
1 stick butter
5-6 slices of bread, broken into small pieces
1 lb elbow macaroni, cooked
salt & pepper to taste

While macaroni is boiling, scramble eggs and milk in a bowl. Add salt & pepper. Pour half macaroni into 10" square baker. Slice Velveeta to cover macaroni completely. Top with remaining macaroni. Pour egg/milk mixture over macaroni. **I usually add more "cheese" here. (OK - who are we kidding? Velveeta isn't really cheese so I had to use quotation marks!)** Cover with crumbled bread and slice pats of butter to cover bread. Bake uncovered at 350* for 30-40 min. (It can sometimes take longer so watch it).

It's super yummy. If you have another mac & cheese recipe, feel free to post it to me. :) I should warn you, though, that The Boy and The Girl are extraordinarily picky and neither one will eat any mac & cheese except for the blue box crap!

  1. I am suspicious of the bread in there. Very suspicious.
